Peppermint, Mentha piperita, belongs to the Lamiaceae family and is a perennial herbaceous plant. It has a rhizome and upright or creeping stems that can reach up to 1.20 m in height.
The reddish, square stems grow up to 80 cm tall and contain esters. The green, opposite, petiolate leaves measure between 4 and 10 cm and turn reddish in the sun and coppery-red in the shade. They are covered with secretory hairs containing volatile aromatic substances, which are extracted through steam distillation.
Peppermint prefers clayey, calcareous and moist soils. Its stoloniferous roots allow it to spread easily. This hybrid comes from crossing Mentha aquatica and Mentha spicata and is cultivated in Europe, North America and Russia.
Peppermint essential oil, obtained by distilling the flowering tops, is a colorless, pale yellow or sometimes pale yellow-green liquid. Its invigorating scent is powerful and pervasive.
The oil's composition varies according to the maturation stage at harvest, with notable differences in the concentrations of menthol and menthone.
